How to Make a Pour Over Coffee

Choose your favorite organic coffee bean and make a pour over cover. The natural paper filter, filters the cholesterol invoking oils from the coffee bean, and the glass container is a safer option for hot liquids. The perfect cup of coffee is worth a little effort. We spent many days trying different brewing methods and pour over techniques, and this one does the trick. Good tools and techniques are the secret to a perfect brew and less bitter coffee. And.. it’s fun! Use these tools and follow the steps, and you will have a perfect cup of coffee every time!

The Tools

Here’s what you need:

1. Fresh Roasted Coffee Beans

A good brew starts with freshly roasted coffee beans. Check the date on the package for the most recent roast. The fresher the better. Try your local roaster or our favorite, Charleston Coffee Roasters. The lighter roasted beans are more acidic, so select medium to bold for a more alkalizing choice. Tip: The darker the bean, the darker the roast.
For less bitterness and best results, grind the beans to a coarseness similar to sea salt. To blend, we recommend the Baratza Encore Conical Burr Coffee Grinder, the go-to entry level grinder with 40 grind settings from fine to course. It includes a storage container for the beans, with a rubber tightly sealed container to keep the beans fresh. If you have a Magic Bullet Blender, use the smallest cup and the straight blade, and that works too. Be sure not to over blend the grinds if using a smaller grinder.

2. Digital Kitchen Scale

A digital kitchen scale is the secret to the perfect pour over. Weigh the water, weigh the beans, we’re not messing around here! Use a Kitchen scale to measure a 1 to 15 gram ratio of coffee beans to water.

3. Pour Over Kettle

This is one of our favorite coffee tools! To brew the perfect cup with the Chemex, a pouring kettle provides the perfect flow of water to make the distribution just right. This kettle has a built in thermometer. buy now

Tip: Boiling is 220F. The ideal water temperature for the perfect pour over is 180F – 200F

4. Pour Over Drip Coffee Maker

To brew coffee, we love the Chemex pour over glass coffee maker. The glass is non-porous which will not absorb odors or chemical residues. Use Chemex natural coffee filters which come pre-folded.

Tip: As you place the filter into the top of the bottle, one side with be doubled from the filter.

THE METHOD

Here’s how you do it:
1. Place a small cup on the digital kitchen scale and press Tare to make it 0. Add 40 grams of coarsely ground coffee beans to the cup.


2. Place a natural filter into the Chemex. Boil a small amount of water, and pre-wet the filter, swirling the hot water inside of the bottle to pre-heat the glass. Pour out the water and add the measured coffee beans to the filter.


3. Bring 600 grams (20 oz) of water to a boil.


4. Pour the boiling water into the pour over kettle.


5. Place the Chemex on the digital scale and press Tare to 0 the weight. Pouring slowly over the coffee beans, start on the outer rim of the filter and move in, adding 60 – 100 grams of boiling water, completely saturating the beans.


Watch the beans “bloom” as it rises, releasing Co2. It will bubble and soften, allow it to breathe. This will be the most bitter part of the brew, so be careful to only add a small amount of water to the first pour.


6. Wait 30 seconds and add another 150 grams of water, starting from the center of the filter and pouring towards the rim, then back to center. This allows the beans to become completely saturated and evened out.


7. After about a minute, add another 200 grams of water.


8. Wait for the water to filter the coffee, then add the remaining 150 grams of water.
Note: Use a 1 to 15 coffee bean to water ratio.For a single serve, one cup brew, use 23 grams of coffee beans and 350 grams of water.

Ingredients
  

  • 20 oz filtered water
  • 40 grams organic coffee coursely grounded coffee beans

Instructions
